SUMMER FRUIT COBBLER

Summer fruit cobbler, makes 6 servings

Serve it warm or child-either way it's a delicious way to eat fruits.

3 each: peaches, plums, apricots, and nectarines
1/4 cup naturally milled cane sugar or granulated sugar
2 tablespoons pure maple squeezed lemon juice
Cooking spray or oil
Topping:
3/4 cup unbleached white flour
1/4 cup rolled oats (oldfashioned oat-meal)
2 tablespoons wheat germ
1 teaspoon baking powder
1/4 cup naturally milled cane sugar or granulated sugar
1/41/4 tablespoon lemon zest
1 large egg, room temperature, or equivalent egg replacer
2 tablespoons vegetables margarine melted or soy vegetable spread
1/2 cup soy milk or nonfat milk

1. Preheat oven to 350° and spray or lightly oil a1-1/2 to 2-quart capacity baking dish
2. Pit fruit and cut into thick wedges. In a large bowl, combine fruit, sugar, maple syrup, and lemon juice. Toss well to combine and transfer to prepared baking dish.
3. In a medium bowl, whisk together flour, oats, wheat germ, baking powder, sugar, and lemon zest.
4. In a blender,  combine egg, margarine, and milk. Cover and blend on high speed for 5 to 10 seconds until well blended. Pour over dry ingredients; stir until blended.
5. Pour topping batter evenly over the fruit filling. Bake for about 1 hour, or until fruit I bubbly and topping is golden brown.
